Earl Grey Tea & Summer Lemon Loaf
---- Ingredients ----
For the Loaf:
1/2 cup unsalted butter, softened
1 cup granulated sugar
9 tablespoons of aquafaba (or your favourite egg replacer, 3 eggs worth)
Zest of 1 lemon
1 tablespoon lemon juice
2 teaspoons vanilla extract
1/3 cup buttermilk (we made a dairy-free version with 1/3 cup soy milk and a tea spoon of apple cider vinegar, mixed, and let it sit for 10 minutes before adding)
1 1/2 cups all purpose flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
4 teaspoons of Earl Grey Tea (2 tea bags)
For the Glaze:
1/2 cup soy milk
2 teaspoons of Earl Grey tea (1 tea bag)
1 1/4 cups powdered sugar

Preheat the oven to 350°F, and prepare a loaf pan with butter and parchment paper.
Beat the butter and sugar until its light and fluffy.
Next, add the aquafaba (or your preferred egg substitute) and mix it until it’s well incorporated.
Add the rest of the wet ingredients, lemons zest, lemon juice, vanilla extract, and buttermilk, then mix till everything is as mixed as possible.
In a separate bowl, mix the all-purpose flour, salt, baking soda, baking powder, and the star of the show, the Earl Grey Tea .
Incorporate the dry ingredients into the wet mix, a little at a time until combined but do not over-mix.
Lastly, pour the mixture into your loaf pan and level it out. Place it in the over for 40-55 minute or until a toothpick comes out clean.
[Optional] For the Glaze: Let the cake cool completely before glazing. Bring the milk and to a boil on medium heat, take off heat and steep the earl grey in it for ten minutes. Then, slowly pour the little bits of the infused milk into the powdered sugar until you are happy with the consistency. Once the cake is completely cooled you can glaze it and enjoy!
